Indigenous food industry gets green salad light

Traditional bush tucker is being touted as the major ingredients of a new type of salad on the menu if a project by an Aboriginal community near Hervey Bay in Queensland gets off the ground.

According to Primary Industries staff, the Dhugamin Aboriginal Corporation is developing a native salad industry with interest already from Queensland supermarkets and restaurants.

Project manager Craig Davis says four native salad varieties have been planted and the bush tucker is due to be market tested by the end of the year.

The plants include Warrigal Greens, also known as New Zealand spinach, a native violet, a scrambling lily and a sea celery which is part of the celery or parsley family.
