Heat and Control has launched its universal potato chip (UPC) system that allows the production of all types of potato chips or crisps snacks using one continuous fryer.
According to the company, the UPC system has been in development for five years and it is the first fryer machine that has the ability to fry all manner of potato, plantain or crisps with different textures, moisture content and colour qualities.
The UPC system utilises independent fryer modules integrated into one continuous frying system. Adjustment of the frying time, temperature and oil flow in each module will produce chips that have different texture, moisture and colour qualities. The system includes a Programmable Logic Control (PLC) that stores multiple recipes for quick product changeovers.
